  • 8 oz fresh mozzarella cheese, sliced into rounds
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey

Instructions

  1. Combine olive oil, balsamic vinegar, garlic, Italian seasoning, salt, pepper, and paprika in a dish. Marinate the flank steak for at least 30 minutes.
  2. Pour balsamic vinegar and honey into a saucepan; reduce over medium heat until thickened.
  3. Toss tomatoes with olive oil, balsamic vinegar, salt, and pepper in a mixing bowl. Let sit to enhance juiciness.
  4. Heat grill until hot; grill the steak for 4-5 minutes per side for medium-rare.
  5. Transfer to a cutting board to rest before slicing thinly against the grain.
  6. Layer sliced steak with mozzarella, topped with caramelized tomatoes and basil.
  7. Drizzle with balsamic glaze and olive oil. Serve immediately.
