Description

A warm and simple miso soup that is nourishing and comforting, perfect for busy nights.


Ingredients

  • 4 cups water
  • 1 teaspoon hondashi powder
  • ¼ cup wakame seaweed (cut into ½ inch pieces)
  • 8 ounces tofu (drained and cut into ½ inch cubes)
  • 4 tablespoons gluten free miso paste (white, yellow, or red)
  • 1 stalk green onion (thinly sliced, optional)

Instructions

  1. Heat the water in a medium-sized pot over medium-high heat until it reaches a rolling boil.
  2. Stir in the hondashi powder, followed by the wakame seaweed and tofu.
  3. Bring back to a light boil, then lower the heat and let it simmer for about 3 minutes.
  4. Turn off the heat and whisk in the miso paste with a scoop of hot broth, then pour it back through a strainer into the pot.
  5. If using, add the sliced green onion on top.
  6. Ladle the soup into bowls and serve warm.

Notes

This soup can be customized with additional ingredients like greens or mushrooms. Avoid boiling after adding miso to preserve flavor.
