Ingredients

- 4 cups water
- 1 teaspoon hondashi powder
- ¼ cup wakame seaweed (cut into ½ inch pieces)
- 8 ounces tofu (drained and cut into ½ inch cubes)
- 4 tablespoons gluten free miso paste (white, yellow, or red)
- 1 stalk green onion (thinly sliced, optional)
Instructions
- Heat the water in a medium-sized pot over medium-high heat until it reaches a rolling boil.
- Stir in the hondashi powder, followed by the wakame seaweed and tofu.
- Bring back to a light boil, then lower the heat and let it simmer for about 3 minutes.
- Turn off the heat and whisk in the miso paste with a scoop of hot broth, then pour it back through a strainer into the pot.
- If using, add the sliced green onion on top.
- Ladle the soup into bowls and serve warm.
Notes
This soup can be customized with additional ingredients like greens or mushrooms. Avoid boiling after adding miso to preserve flavor.
