- 2 lbs beef stew meat, cut into 1-inch cubes
- 12 oz wide egg noodles
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans (10.5 oz each) cream of mushroom soup
- 1 cup beef broth
- 1/2 cup sour cream
- 8 oz sliced mushrooms
- 2 tbsp unsalted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- Salt and black pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- Fresh parsley for garnish
Instructions
- Season the beef stew meat generously with garlic powder, onion powder, dried thyme, salt, and pepper. Place the seasoned meat in the slow cooker.
- Layer the diced onion, minced garlic, and sliced mushrooms on top of the beef to build flavor.
- Pour the cream of mushroom soup and beef broth over everything. Stir gently to combine the ingredients well.
- Cook on LOW for 480 minutes or HIGH for 300 minutes until the beef is fork-tender and falls apart easily.
- In the last 30 minutes of cooking, stir in the sour cream and butter until the mixture becomes creamy and thick.
- Cook the wide egg noodles according to package directions, then drain thoroughly.
- Add the noodles to the slow cooker, stirring gently until every noodle is coated in the thick mushroom gravy.
- Generously sprinkle the shredded cheddar cheese on top. Cover for 5 minutes until the cheese is melted and gooey.
- Garnish with fresh parsley before serving hot directly from the slow cooker.
Notes
For variations, you can substitute ground beef for the stew meat or use chickpeas for a vegetarian option.
