Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 12 oz wide egg noodles
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 8 oz sliced mushrooms
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Season the beef stew meat generously with garlic powder, onion powder, dried thyme, salt, and pepper. Place the seasoned meat in the slow cooker.
  2. Layer the diced onion, minced garlic, and sliced mushrooms on top of the beef to build flavor.
  3. Pour the cream of mushroom soup and beef broth over everything. Stir gently to combine the ingredients well.
  4. Cook on LOW for 480 minutes or HIGH for 300 minutes until the beef is fork-tender and falls apart easily.
  5. In the last 30 minutes of cooking, stir in the sour cream and butter until the mixture becomes creamy and thick.
  6. Cook the wide egg noodles according to package directions, then drain thoroughly.
  7. Add the noodles to the slow cooker, stirring gently until every noodle is coated in the thick mushroom gravy.
  8. Generously sprinkle the shredded cheddar cheese on top. Cover for 5 minutes until the cheese is melted and gooey.
  9. Garnish with fresh parsley before serving hot directly from the slow cooker.

Notes

For variations, you can substitute ground beef for the stew meat or use chickpeas for a vegetarian option.
