A quick and comforting rice bowl featuring ground turkey, black beans, corn, and vibrant toppings perfect for busy weeknights.
Ingredients

- 1 tbsp olive oil
- 1 lb ground turkey
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 packet (1 oz) taco seasoning OR 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup water or chicken broth
- 1 (15 oz) can black beans (rinsed and drained)
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
- Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro (chopped), lime wedges
Instructions
- Prepare rice according to package directions and keep warm.
- In a large skillet, heat olive oil over medium heat and add chopped onion; cook until softened, about 3–5 minutes.
- Add garlic and cook for another minute until fragrant.
- Add ground turkey, breaking it up and cooking until no pink remains, about 5–7 minutes, then drain excess grease.
- Stir in taco seasoning and 1/2 cup of water or broth; simmer for 2–3 minutes.
- Stir in black beans and corn; cook for another 3–5 minutes until heated through.
- Assemble bowls with a serving of rice topped with the turkey mixture, and add desired toppings.
- Serve immediately with lime wedges.
Notes
Great for meal prep; store components separately and reheat when ready to serve.
