Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning OR 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup water or chicken broth
  • 1 (15 oz) can black beans (rinsed and drained)
  • 1 cup frozen corn
  • 4 cups cooked rice (brown or white)
  • Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro (chopped), lime wedges

Instructions

  1. Prepare rice according to package directions and keep warm.
  2. In a large skillet, heat olive oil over medium heat and add chopped onion; cook until softened, about 3–5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Add ground turkey, breaking it up and cooking until no pink remains, about 5–7 minutes, then drain excess grease.
  5. Stir in taco seasoning and 1/2 cup of water or broth; simmer for 2–3 minutes.
  6. Stir in black beans and corn; cook for another 3–5 minutes until heated through.
  7. Assemble bowls with a serving of rice topped with the turkey mixture, and add desired toppings.
  8. Serve immediately with lime wedges.
