- 10 oz cheese tortellini
- 1 lb chicken breast, sliced into medium strips
- 1 1/2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp dried basil
- 1/2 tsp dried parsley
- Salt and black pepper, to taste
- 3/4 cup heavy cream
- 1/4 cup chicken broth
- 1/2 cup shredded sharp cheddar cheese
- 3 oz Velveeta cheese, cubed
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 oz cream cheese
- 1/2 tsp garlic powder
- 1 tsp lemon juice
Instructions
- Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions until tender. Drain and set aside.
- Season the chicken with salt, black pepper, Italian seasoning, and dried basil, ensuring it’s evenly coated.
- Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook until browned on the outside and fully cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Reduce the heat slightly and add the minced garlic to the pan. Sauté briefly until fragrant, about 1 minute.
- Pour in the chicken broth and heavy cream, stirring gently while scraping up any flavorful bits from the bottom.
- Lower the heat and add Velveeta, shredded cheddar, grated Parmesan, shredded mozzarella, and cream cheese. Stir continuously until everything melts into a smooth and rich sauce.
- Mix in the garlic powder and lemon juice to enhance the flavor profile.
- Add the cooked tortellini to the sauce and gently toss until each piece is completely coated.
- Return the cooked chicken to the pan and mix lightly, allowing everything to warm together for an additional minute.
- Serve hot, garnished with a light sprinkle of fresh parsley or extra Parmesan if desired.
