Description

Ingredients

  • 10 oz cheese tortellini
  • 1 lb chicken breast, sliced into medium strips
  • 1 1/2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • Salt and black pepper, to taste
  • 3/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded sharp cheddar cheese
  • 3 oz Velveeta cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 oz cream cheese
  • 1/2 tsp garlic powder
  • 1 tsp lemon juice

Instructions

  1. Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions until tender. Drain and set aside.
  2. Season the chicken with salt, black pepper, Italian seasoning, and dried basil, ensuring it’s evenly coated.
  3. Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook until browned on the outside and fully cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. Reduce the heat slightly and add the minced garlic to the pan. Sauté briefly until fragrant, about 1 minute.
  5. Pour in the chicken broth and heavy cream, stirring gently while scraping up any flavorful bits from the bottom.
  6. Lower the heat and add Velveeta, shredded cheddar, grated Parmesan, shredded mozzarella, and cream cheese. Stir continuously until everything melts into a smooth and rich sauce.
  7. Mix in the garlic powder and lemon juice to enhance the flavor profile.
  8. Add the cooked tortellini to the sauce and gently toss until each piece is completely coated.
  9. Return the cooked chicken to the pan and mix lightly, allowing everything to warm together for an additional minute.
  10. Serve hot, garnished with a light sprinkle of fresh parsley or extra Parmesan if desired.

Notes
