Ingredients

  • 2 pounds chicken (preferably thighs or breasts)
  • 8 cups chicken broth
  • 4 cups tomatillos, husked and chopped
  • 1 cup cilantro, chopped
  • 2 jalapeños, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • Salt and pepper to taste
  • Lime wedges for serving
  • Radishes, sliced for garnish
  • Avocado, diced for garnish
  • Chopped onion for garnish
  • Tortilla chips for serving

Instructions

  1. In a large pot, combine the chicken broth with your chicken pieces. Bring to a boil, then reduce heat and let it simmer gently for about 20 to 25 minutes.
  2. Once the chicken is cooked through, remove it from the pot and let it cool. Shred the chicken and set it aside.
  3. In a blender, combine tomatillos, cilantro, jalapeños, onion, and garlic. Blend until smooth.
  4. Pour the green mixture back into the pot with the broth and add cumin, oregano, salt, and pepper. Let it simmer for about 10 to 15 minutes.
  5. Return the shredded chicken to the pot and stir gently. Heat through for about 5 minutes.
  6. Serve hot, garnished with lime wedges, sliced radishes, diced avocado, chopped onion, and tortilla chips.

Notes

Prep ahead by shredding chicken and chopping vegetables in advance. For added flavor, consider roasting tomatillos and jalapeños before blending.
