  • 1 tablespoon fresh ginger, grated
  • 1 can (14 ounces) coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat until it shimmers.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger; cook for about 1 minute.
  4. Add curry powder, cumin, and turmeric; cook for an additional 2 minutes.
  5. Stir in rinsed lentils and diced sweet potato until coated with spices.
  6. Pour in vegetable broth and coconut milk; bring to a gentle boil.
  7. Reduce heat to a simmer, cover, and cook for about 30 minutes.
  8. Season with salt and pepper to taste before serving.
  9. Garnish with fresh cilantro if desired and serve warm over rice or quinoa.
