Instructions
- Heat olive oil in a large pot over medium heat until it shimmers.
- Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and grated ginger; cook for about 1 minute.
- Add curry powder, cumin, and turmeric; cook for an additional 2 minutes.
- Stir in rinsed lentils and diced sweet potato until coated with spices.
- Pour in vegetable broth and coconut milk; bring to a gentle boil.
- Reduce heat to a simmer, cover, and cook for about 30 minutes.
- Season with salt and pepper to taste before serving.
- Garnish with fresh cilantro if desired and serve warm over rice or quinoa.
