Description

Crisp chicken cutlets topped with a savory Parmesan-mozzarella blend provide a steakhouse-style dinner that’s easy to make at home.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts, about 6 oz each
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 cup plain bread crumbs
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon dried Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup shredded low-moisture mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Prepare the oven and pan. Preheat the oven to 400°F. Pour 1 teaspoon of the measured olive oil into a 9-by-13-inch baking dish and spread it across the bottom.
  2. Flatten the chicken. Place each chicken breast between two sheets of plastic wrap or parchment paper. Pound the thickest sections with the flat side of a meat mallet until each breast is approximately 1/2 inch thick.
  3. Season the flour. Add the flour, salt, and black pepper to the first shallow bowl. Stir until the seasoning is evenly distributed.
  4. Prepare the egg wash. Whisk the eggs and whole milk in the second shallow bowl until no streaks of egg white remain.
  5. Mix the breading. In the third bowl, combine the bread crumbs, 3/4 cup Parmesan, Italian seasoning, and minced garlic.
  6. Bread the chicken. Coat one breast lightly in seasoned flour and shake off the excess. Dip it into the egg mixture and press both sides firmly into the breadcrumb mixture.
  7. Sear until golden. Heat the remaining olive oil in a 12-inch skillet over medium-high heat. Cook the chicken for 3 to 4 minutes per side until the coating is golden.
  8. Add the cheese topping. Arrange the seared chicken in the prepared baking dish. Mix the mozzarella with the reserved 1/4 cup Parmesan, then divide the cheese evenly over the chicken.
  9. Bake and rest. Bake uncovered for 12 to 18 minutes until the cheese melts and the chicken reaches an internal temperature of 165°F. Rest for 5 minutes before serving.

Notes

This dish pairs well with creamy mashed potatoes, roasted vegetables, or a Caesar salad.
