A delightful and creamy pasta dish featuring baked chicken tossed in a Caesar dressing.

- 4 boneless skinless chicken breasts (about 2 lbs)
- 1 cup thick creamy Caesar dressing
- 3/4 cup freshly grated Parmesan cheese
- 1/2 tsp cracked black pepper
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 12 oz rotini pasta
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 4 oz cream cheese, softened
- 1 cup freshly grated Parmesan cheese
- 3/4 cup shredded mozzarella cheese
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp white pepper
Instructions
- Preheat your oven to 400°F and lightly coat a baking dish with olive oil.
- Pat the chicken dry with a paper towel and season both sides with cracked black pepper and garlic powder.
- Combine the Caesar dressing with half of the grated Parmesan cheese, and spread this mixture evenly over the chicken.
- Sprinkle the remaining Parmesan cheese over the top of the chicken.
- Bake the chicken for 25-30 minutes, until it’s cooked through. Place it under the broiler for the last few minutes for a golden finish.
- While the chicken bakes, cook the rotini in salted water according to package instructions until al dente, then drain.
- Melt the butter in a skillet over medium heat, add the minced garlic, and sauté until fragrant, about 1-2 minutes.
- Pour in the heavy cream, and heat gently to allow the sauce to come together.
- Stir in the cream cheese, mixing until it melts into the sauce.
- Add the freshly grated Parmesan and shredded mozzarella, allowing them to melt completely into the sauce.
- Incorporate the cooked rotini into the sauce, loosening it up with a splash of reserved pasta water if needed for creaminess.
- Serve the creamy rotini alongside sliced baked chicken for a comforting meal.
