Description

A delightful and creamy pasta dish featuring baked chicken tossed in a Caesar dressing.


Ingredients

  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 1 cup thick creamy Caesar dressing
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 tsp cracked black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 12 oz rotini pasta
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 4 oz cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp white pepper

Instructions

  1. Preheat your oven to 400°F and lightly coat a baking dish with olive oil.
  2. Pat the chicken dry with a paper towel and season both sides with cracked black pepper and garlic powder.
  3. Combine the Caesar dressing with half of the grated Parmesan cheese, and spread this mixture evenly over the chicken.
  4. Sprinkle the remaining Parmesan cheese over the top of the chicken.
  5. Bake the chicken for 25-30 minutes, until it’s cooked through. Place it under the broiler for the last few minutes for a golden finish.
  6. While the chicken bakes, cook the rotini in salted water according to package instructions until al dente, then drain.
  7. Melt the butter in a skillet over medium heat, add the minced garlic, and sauté until fragrant, about 1-2 minutes.
  8. Pour in the heavy cream, and heat gently to allow the sauce to come together.
  9. Stir in the cream cheese, mixing until it melts into the sauce.
  10. Add the freshly grated Parmesan and shredded mozzarella, allowing them to melt completely into the sauce.
  11. Incorporate the cooked rotini into the sauce, loosening it up with a splash of reserved pasta water if needed for creaminess.
  12. Serve the creamy rotini alongside sliced baked chicken for a comforting meal.
