- 1 tablespoon vanilla extract
- 2 eggs

- 1/2 cup sour cream
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat softened cream cheese until smooth.
- Add sugar and vanilla extract; mix until light and fluffy.
- Add eggs one at a time, mixing thoroughly after each addition.
- Sprinkle in ground cinnamon, and whisk in sour cream until well-combined.
- Pour cheesecake filling over the crust and smooth the top with a spatula.
- Bake for 55 to 60 minutes until the center jiggles slightly.
- Turn off the oven and leave the cheesecake inside with the door ajar for about an hour.
- Cool completely at room temperature, then refrigerate for at least 4 hours before serving.
Notes
