  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat softened cream cheese until smooth.
  4. Add sugar and vanilla extract; mix until light and fluffy.
  5. Add eggs one at a time, mixing thoroughly after each addition.
  6. Sprinkle in ground cinnamon, and whisk in sour cream until well-combined.
  7. Pour cheesecake filling over the crust and smooth the top with a spatula.
  8. Bake for 55 to 60 minutes until the center jiggles slightly.
  9. Turn off the oven and leave the cheesecake inside with the door ajar for about an hour.
  10. Cool completely at room temperature, then refrigerate for at least 4 hours before serving.
