- 1 cup strawberries, sliced
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package of store-bought pound cake or sponge cake
- Whipped cream for serving
- Mint leaves for garnish (optional)
Instructions
- In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat or stir until silky and lump-free.
- Unwrap the pound or sponge cake and place it on parchment paper. Use a rolling pin to gently flatten the cake into an even layer.
- Spread the cream cheese mixture evenly over the cake, leaving a 1/2 inch border.
- Arrange the sliced strawberries in a single layer on top of the cream cheese.
- Starting at one edge, roll the cake up tightly using the parchment to assist. Keep the roll snug.
- Wrap the roll in plastic wrap and chill in the refrigerator for at least an hour.
- Unwrap the roll and slice into bite-sized pieces with a sharp serrated knife.
- Serve on a plate topped with whipped cream and mint leaves if desired.
Notes
Use room temperature cream cheese for best results. Chill thoroughly for neat slices.
