Instructions
- Preheat oven to 425°F. Scrub and prick sweet potatoes, then bake directly on oven rack or baking sheet for 40-50 minutes until tender.
- Once cool, peel sweet potatoes, then reduce oven temperature to 350°F.
- In a large bowl, mash sweet potatoes until smooth, then mix in milk, eggs, sugar, melted butter, salt, vanilla, and cinnamon until well combined.
- Grease a 9×13-inch baking dish and pour sweet potato mixture evenly into the dish.
- In a separate bowl, combine brown sugar, flour, chopped pecans, and softened butter, mixing until crumbly.
- Sprinkle topping evenly over sweet potato mixture and bake for 40-45 minutes until golden brown.
