Quick and satisfying Thai Peanut Chicken Wraps filled with shredded chicken, crunchy veggies, and creamy peanut sauce, perfect for busy weeknight dinners.

- 2 cups cooked chicken, shredded
- 1/2 cup peanut sauce
- 1 cup shredded carrots
- 1 cup cucumber, sliced
- 1/2 cup red bell pepper, sliced
- 4 large lettuce leaves
- 4 large flour tortillas
- Chopped peanuts (for garnish)
- Fresh cilantro (for garnish)
Instructions
- In a mixing bowl, combine the shredded chicken and peanut sauce. Stir until the chicken is well-coated with the sauce and set aside.
- Lay a flour tortilla flat on a clean, dry surface, and place one large lettuce leaf in the center of the tortilla.
- Add a generous portion of the peanut chicken mixture on top of the lettuce leaf.
- Top the chicken with a layer of shredded carrots, cucumber slices, and red bell pepper.
- Carefully fold the tortilla tightly, tucking in the sides as you roll to form a wrap.
- Repeat the process with the remaining tortillas and filling.
- Once wrapped, slice each wrap in half diagonally, and garnish with chopped peanuts and fresh cilantro.
- Serve immediately and enjoy the medley of flavors!
Notes
These wraps can be customized with different proteins or vegetables. Store leftovers in the fridge for up to 3–4 days.
