- 1 1/2 pounds boneless skinless chicken breasts, sliced into strips

- 1 teaspoon onion powder

- 1 cup chicken broth
- 1 1/2 cups heavy cream
- 4 ounces cream cheese, softened
- 6 ounces Velveeta cheese, cubed
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Italian seasoning
Instructions
- Start by bringing a large pot of salted water to a boil. Once boiling, add the spaghetti and cook until al dente, usually about 8-10 minutes. Drain and set aside.
- In a large skillet over medium-high heat, melt the olive oil and butter together. Add the sliced chicken and sprinkle with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Transfer the chicken onto a plate.
- Lower the heat to medium and add minced garlic to the skillet. Cook until fragrant, roughly 30 seconds to 1 minute.
- Pour in the chicken broth, stirring to deglaze the skillet and lift any flavorful bits from the bottom of the pan.
- Pour in the heavy cream and add the cream cheese. Use a whisk to blend everything into a smooth sauce.
- Add in the Velveeta, grated Parmesan, and mozzarella cheese. Stir until the cheeses melt and the sauce thickens, creating a creamy consistency.
- Sprinkle in the Italian seasoning, then return the chicken to the sauce, stirring to coat it evenly.
- Gently fold in the cooked spaghetti, ensuring each strand is coated with sauce. Allow it to sit over low heat for a couple of minutes so the sauce can fully envelop the pasta.
- Serve warm, garnished with chopped parsley for a fresh finish.
Notes
You can add vegetables or swap proteins to suit your family’s tastes. For extra creaminess, consider using half-and-half instead of heavy cream.
