  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup whole milk
  • 3 oz Velveeta cheese, cubed
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup freshly grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

  1. Begin by bringing a large pot of salted water to a boil. Cook the spaghetti until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken pieces, seasoning them with Cajun seasoning, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper. Cook until the chicken is golden and thoroughly cooked, which should take about 6-7 minutes. Transfer the chicken to a plate.
  3. Lower the heat to medium and melt the remaining butter in the same skillet. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth, heavy cream, and milk, stirring gently until well combined and smooth.
  5. Add the cubed Velveeta cheese and cream cheese, stirring continuously until melted and blended into the sauce.
  6. Gradually incorporate the cheddar and Parmesan cheeses, continuing to stir until the sauce is thick and creamy.
  7. Return the cooked chicken to the skillet, mixing until coated with the sauce.
  8. Finally, add the drained spaghetti, tossing gently to ensure every strand is enveloped in that cheesy goodness. Let it rest on low heat for about 2 minutes.
  9. Finish by garnishing with chopped fresh parsley and serve warm.
