  • 1/2 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 3 oz Velveeta cheese, cubed
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 oz cream cheese
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Begin by bringing a large pot of salted water to a rolling boil. Add the spaghetti and cook until just tender, about 8-10 minutes. Once cooked, drain the spaghetti and set it aside.
  2. Next, season the chicken pieces generously with Cajun seasoning, Italian seasoning, smoked paprika, salt, and pepper, ensuring they are evenly coated.
  3. Heat the olive oil along with 2 tablespoons of butter in a large skillet over medium-high heat. Once the butter has melted, add the chicken pieces. Cook until the chicken is lightly browned on the outside and fully cooked through, about 5-7 minutes. Transfer the chicken to a plate.
  4. Reduce the heat to medium and melt the remaining tablespoon of butter. Add the minced garlic and sauté for about 1 minute until it becomes fragrant.
  5. Pour in the chicken broth and heavy cream, stirring gently and scraping the browned bits from the bottom of the pan.
  6. Add the cubed Velveeta and cream cheese, stirring constantly until both cheeses are melted and the sauce is smooth. Then, mix in the shredded mozzarella and Parmesan cheese, continuing to stir until you achieve a thick, creamy sauce.
  7. Season the sauce with garlic powder and lemon juice for a touch of brightness. Stir well to combine.
  8. Add the cooked spaghetti to the sauce, tossing until the noodles are fully coated.
  9. Gently mix in the cooked chicken, allowing everything to warm together for one additional minute.
  10. Serve hot, topped with fresh parsley and extra Parmesan cheese if desired.
