- 12 oz linguine pasta
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 5 cloves garlic, minced
- 1 tsp Cajun seasoning (optional)
- 1/2 tsp black pepper
- Salt, to taste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 4 oz Velveeta cheese, cubed
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 oz cream cheese
- 1/2 tsp onion powder
- 1 tsp lemon juice
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the linguine until tender, yet slightly firm to the bite. Drain and set aside.
- Season the sliced chicken with Cajun seasoning (if using), salt, and black pepper.
- Heat the olive oil with 2 tablespoons of butter in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown. Transfer to a plate.
- Lower the heat to medium and melt the remaining tablespoon of butter in the same skillet. Add the garlic and cook until fragrant.
- Pour in the chicken broth and heavy cream, stirring gently. Allow to simmer.
- Reduce the heat and add the Velveeta cheese, stirring until melted. Then add the Parmesan, mozzarella, and cream cheese, mixing until smooth.
- Stir in the onion powder and lemon juice.
- Add the cooked linguine to the skillet, tossing it in the sauce.
- Return the chicken to the skillet and gently combine everything for about a minute.
- Serve hot, topped with fresh parsley.
Notes
Feel free to add vegetables or swap out cheeses based on preference. This dish can also be made with shrimp or tofu for a variation.
