Ingredients

  • 12 oz linguine pasta
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 tsp Cajun seasoning (optional)
  • 1/2 tsp black pepper
  • Salt, to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 4 oz Velveeta cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 oz cream cheese
  • 1/2 tsp onion powder
  • 1 tsp lemon juice
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine until tender, yet slightly firm to the bite. Drain and set aside.
  2. Season the sliced chicken with Cajun seasoning (if using), salt, and black pepper.
  3. Heat the olive oil with 2 tablespoons of butter in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown. Transfer to a plate.
  4. Lower the heat to medium and melt the remaining tablespoon of butter in the same skillet. Add the garlic and cook until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring gently. Allow to simmer.
  6. Reduce the heat and add the Velveeta cheese, stirring until melted. Then add the Parmesan, mozzarella, and cream cheese, mixing until smooth.
  7. Stir in the onion powder and lemon juice.
  8. Add the cooked linguine to the skillet, tossing it in the sauce.
  9. Return the chicken to the skillet and gently combine everything for about a minute.
  10. Serve hot, topped with fresh parsley.

Notes

Feel free to add vegetables or swap out cheeses based on preference. This dish can also be made with shrimp or tofu for a variation.
