- 12 oz linguine pasta
- 1 1/2 lbs boneless skinless chicken breasts, pounded to even thickness
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 5 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 4 oz cream cheese, softened
- 1 1/4 cups grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- Cook linguine in salted water until tender. Reserve 1/2 cup pasta water, then drain and set aside.
- Season the chicken with Italian seasoning, garlic powder, onion powder, salt, and pepper.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until deeply golden brown. Transfer to a plate and let it rest for a few minutes.
- Reduce the heat to medium. Melt the remaining butter in the skillet, then add the minced garlic. Cook for 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer.
- Add the cream cheese and stir continuously until it’s smooth and fully incorporated.
- Gradually stir in the grated Parmesan and mozzarella cheeses until the sauce is thick, glossy, and clings to a spoon.
- Toss the cooked linguine in the sauce until every strand is heavily coated. Use reserved pasta water to loosen it up if necessary.
- Slice the rested chicken and arrange it on top of the linguine.
- Garnish with fresh parsley and additional Parmesan cheese. Serve immediately.
Notes
Pound chicken evenly to avoid uneven cooking. Incorporate cheeses gradually to prevent clumps. Adjust seasoning as needed.
