Description

A comforting creamy pasta dish with tender chicken, rich cheeses, and al dente linguine.


Ingredients

  • 12 oz linguine pasta
  • 1 1/2 lbs boneless skinless chicken breasts, pounded to even thickness
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 4 oz cream cheese, softened
  • 1 1/4 cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Cook linguine in salted water until tender. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Season the chicken with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until deeply golden brown. Transfer to a plate and let it rest for a few minutes.
  4. Reduce the heat to medium. Melt the remaining butter in the skillet, then add the minced garlic. Cook for 30 seconds until fragrant.
  5. Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer.
  6. Add the cream cheese and stir continuously until it’s smooth and fully incorporated.
  7. Gradually stir in the grated Parmesan and mozzarella cheeses until the sauce is thick, glossy, and clings to a spoon.
  8. Toss the cooked linguine in the sauce until every strand is heavily coated. Use reserved pasta water to loosen it up if necessary.
  9. Slice the rested chicken and arrange it on top of the linguine.
  10. Garnish with fresh parsley and additional Parmesan cheese. Serve immediately.

Notes

Pound chicken evenly to avoid uneven cooking. Incorporate cheeses gradually to prevent clumps. Adjust seasoning as needed.
