  • 2 tbsp olive oil

  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp parsley
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp all-purpose flour
  • 1 cup broth (chicken or beef as appropriate)
  • 2 cups heavy cream
  • 1 cup shredded Cheddar cheese
  • 1 cup grated Parmesan cheese
  • 4 oz Velveeta cheese, cubed
  • 2 tbsp extra butter
  • Chopped fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until tender with a slight bite, about 8-10 minutes. Drain and set aside, keeping it warm.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small crumbles as it browns, until it develops a rich color. Remove any excess grease and transfer the beef to a plate.
  3. In the same skillet, add the butter and let it melt. Stir in the diced onion and cook until soft and lightly golden, picking up all the flavor from the pan. Add the garlic and cook briefly until fragrant.
  4. Sprinkle in the Cajun seasoning, garlic powder, and parsley. Stir to coat the onions and let the spices bloom for a moment; you’ll start to smell those wonderful aromas.
  5. Add the flour, mixing it into the pan, allowing it to cook for about 30 seconds. Slowly pour in the broth while stirring, then add the heavy cream. Let the sauce warm up and begin to thicken, stirring occasionally.
  6. Gradually add the Cheddar, Parmesan, and Velveeta, stirring until all the cheese melts completely into a rich, creamy sauce. Finish by stirring in the extra butter for a glossy, silky finish.
  7. Return the cooked beef to the skillet and let it gently heat through in the sauce for a couple of minutes.
  8. Add the fettuccine and toss until every strand is well coated in the thick, cheesy sauce.
  9. Serve hot with fresh parsley sprinkled over the top for a vibrant touch.
